Straw Bales as Ceiling and Attic Insulation

Who can I turn to for good info on the ins and outs of such a thing? Home renovation from scratch requiring attic insulation between 2nd- floor ceiling joists. Also interested in raising kitchen ceiling to vaulted style and insulating with straw between rafters and then coating with plaster or other natural material. Seems like I could go ahead and make this happen, but have no experience in such. Who can I turn to professionally in CNY, or do you have an experience to share?
